Oolong is a specialty that was originally produced in the highland plains of the Taiwanese mountains. After picking, about 50% of the teas are fermented and then wilted in the sun. By frequently turning the tea in bamboo baskets during the drying phase, the oolong develops a mild aroma and a large, wildly twisted leaf. The still green leaf core with the fermented leaf edges can be seen on the infused leaf. This tea is very light in the cup and has a very flowery and spicy taste.
